Morioka Jajamen is one of Morioka's three major noodles, along with cold noodles and wanko soba. The most important thing is to add vinegar, chili oil, garlic, etc. to the Jaja noodles to create the flavor you like. Please try adding our special chili oil and homemade Isshozuke (Nanban soy sauce). When you finish eating the noodles, the authentic style is to crack a raw egg into the bowl, mix it up, and then add the boiled water from the noodles to the bowl to finish off your meal with chi tang tang (egg soup).
